We just moved in a rental home and my chihuahua has started pooing in the house when we leave.?

She has didn't do this when we lived in our motorhome. I take her out and it is like pulling teeth to get her to poo outside.

2. put her in her crate when you leave. dogs don't like to poo where they sleep

3. anxiety, she's not likening to be alone in a strange place, and it is strange to her

4. I would also think it's anxiety, because she's doing it after you leave and not while you're there. If she's crate trained then I would put her in there before you leave, if not then paper the bathroom and leave her in there.
